Eh oui, quel bonheur de profiter de cette panac\u00e9e \u00e0 toutes les saisons ! Jusqu&#8217;ici, je la consommais en tisane, en soupe, en tarte &#8230; et puis une forte envie de chinoiseries \u00e0 partager avec une amie vegan m&#8217;a conduite \u00e0 concocter ces d\u00e9licieux nems, qui n&#8217;ont rien \u00e0 envier aux nems \u00e0 la viande. L&#8217;ortie et le tofu sont tous deux riches en prot\u00e9ines, sans compter que le c\u00f4t\u00e9 fum\u00e9 donne une saveur qui rappelle le go\u00fbt du lard des nems classiques. R\u00e9servez.<br>Dans une casserole, chauffez \u00e0 feu doux le nuoc mam, le vianigre de riz, le sucre et l&#8217;eau en remuant jusqu&#8217;\u00e0 ce que le sucre soit fondu. Maintenez le bouillon pendant 3 minutes. Hors du feu, ajoutez l&#8217;ail hach\u00e9, la pur\u00e9e de piment et le jus de citron. Remuez puis ajoutez les carottes r\u00e2p\u00e9es. R\u00e9servez.<br>Cette sauce se conserve un mois au r\u00e9frig\u00e9rateur.<\/p>\n\n\n\n<h5 class=\"has-text-color wp-block-heading\" style=\"color:#5e3725\">Pr\u00e9paration des nems<\/h5>\n\n\n\n<h5 class=\"has-text-color wp-block-heading\" style=\"color:#5e3725\">La farce<\/h5>\n\n\n\n<p>Faites tremper s\u00e9par\u00e9ment les champignons noirs et les vermicelles de soja dans l\u2019eau ti\u00e8de pendant 20 minutes.<br>Lavez, pelez et r\u00e2pez finement les carottes.<br>\u00c9pluchez et hachez finement l\u2019oignon. (je n&#8217;avais pas d&#8217;oignon sous la main, j&#8217;ai utilis\u00e9 une \u00e9chalote \u00e0 la place)<br>\u00c9gouttez les champignons noirs, supprimer les parties dures (pieds, base), et hacher finement. (pour gagner du temps, j&#8217;avais achet\u00e9 les champignons noirs pr\u00e9d\u00e9coup\u00e9s en lamelles, il ne me restait plus qu&#8217;\u00e0 les r\u00e9hydrater et les hacher)<br>\u00c9gouttez les vermicelles et, avec un bon couteau et une planche ou une paire de ciseaux, coupez-les en tron\u00e7ons de 1 cm environ.<br>\u00c9gouttez le tofu fum\u00e9 et d\u00e9taillez-le en petits d\u00e9s<br>Lavez, \u00e9queutez puis ciselez les feuilles d&#8217;orties.<br>Dans un r\u00e9cipient, m\u00e9langez de fa\u00e7on homog\u00e8ne tous les ingr\u00e9dients de la farce\u00a0: champignons noirs, vermicelles transparents, tofu fum\u00e9, orties, carotte, oignon, avec le sel, le sucre et le poivre.<\/p>\n\n\n\n<figure class=\"wp-block-gallery columns-5 is-cropped wp-block-gallery-1 assiette d\u2019eau chaude, \u00e0 laquelle vous pouvez ajouter 2 cuill\u00e8res \u00e0 caf\u00e9 de vinaigre (\u00e7a aiderait \u00e0 rendre les nems plus croustillants). Humidifiez un torchon propre et installez-le sur votre plan de travail, de mani\u00e8re \u00e0 pouvoir disposer deux galettes \u00e0 la fois. Installez une planche ou un plat chemis\u00e9 de papier cuisson pour entreposer les nems.<br>Faites tremper une galette de riz dans l&#8217;assiette d&#8217;eau, et \u00e9gouttez aussit\u00f4t. Disposez votre galette sur votre torchon humide, face lisse sur le torchon, face textur\u00e9e vers vous. R\u00e9p\u00e9tez l&#8217;op\u00e9ration et installez une deuxi\u00e8me galette sur le torchon humide. Laissez les galettes absorber tranquillement l\u2019humidit\u00e9 avant de mettre la farce et de les manipuler.<br>Une fois la premi\u00e8re galette devenue souple et manipulable, prenez une cuill\u00e8re \u00e0 soupe de farce et d\u00e9posez-la pr\u00e8s du bord vers vous, en formant un petit boudin d&#8217;environ 6-7 cm de long.<br>Pliez le bord\u00a0du bas sur la farce, et faites un tour complet sur la farce.<br>Pliez les bords lat\u00e9raux, en les ramenant sur la farce, l\u2019un apr\u00e8s l\u2019autre.<br>Terminez d\u2019enrouler votre nem vers le haut, en \u00e9vitant de trop serrer (la farce gonfle un peu \u00e0 la cuisson). Au bout du rouleau, si le bord ne colle pas bien, humecter un peu le bord pour sceller le rouleau.<br>Entreposez votre nem sur la planche ou le papier cuisson et r\u00e9p\u00e9tez les op\u00e9rations jusqu&#8217;\u00e0 terminer la farce.<br>L&#8217;id\u00e9al est de laisser \u00ab\u00a0s\u00e9cher\u00a0\u00bb les nems crus au r\u00e9frig\u00e9rateur pendant au moins une heure.<\/p>\n\n\n\n<h5 class=\"has-text-color wp-block-heading\" style=\"color:#5e3725\">La cuission des nems<\/h5>\n\n\n\n<p>Pr\u00e9voyez un plat ou une planche avec du papier journal ou une feuille de cuisson. <br>La p\u00e2te de riz est fragile et n\u00e9cessite d&#8217;avoir un ustensile qui limite les risques de coller \u00e0 vos nems pendant que vous les manipulez \u00e0 la cuisson. Pour cela, je vous conseille de vous munir d&#8217;une paire de baguettes chinoises en bambou.<br>Versez de l\u2019huile de friture dans une po\u00eale ou une sauteuse \u00e0 bords hauts, jusqu&#8217;\u00e0 avoir 0,5 cm de niveau d\u2019huile dans le fond. Chauffez l\u2019huile jusqu\u2019\u00e0 140\u00b0C. L&#8217;huile est \u00e0 temp\u00e9rature lorsque des petites bulles se forment autour de vos baguettes lorsqu\u2019elles touchent le fond de la po\u00eale.<br>Voici venu le moment de glisser d\u00e9licatement les nems dans le bain d&#8217;huile. Veillez \u00e0 ce qu&#8217;ils ne se touchent pas, sans quoi ils se collent entre eux, se cr\u00e8vent lorsque vous les d\u00e9tachez et apr\u00e8s \u00e7a crame &#8230; bref, j&#8217;ai fait les b\u00eatises pour vous, et pour vous \u00e9viter frustration et d\u00e9ception, je vous conseille de faire frire vos nems par petites quantit\u00e9s \u00e0 la fois. Retournez les nems r\u00e9guli\u00e8rement pendant la cuisson.<br>L\u2019enveloppe des nems devient blanche et se durcit en cuisant. L&#8217;id\u00e9e est de cuire la farce, sans trop dorer les nems. Cette premi\u00e8re friture permet de conserver les nems au r\u00e9frig\u00e9rateur ou au cong\u00e9lateur quand on en confectionne en grandes quantit\u00e9s ou \u00e0 l\u2019avance. Comptez 5 \u00e0 7 minutes pour cette premi\u00e8re friture.<\/p>\n\n\n\n<p>La deuxi\u00e8me friture se fait avec une huile chauff\u00e9e \u00e0 170\u00b0C. \u00c0 cette temp\u00e9rature, les bulles qui se forment autour des baguette remontent rapidement. <br>Mettre les nems pr\u00e9-frits dans l\u2019huile chaude, et faites frire rapidement, pendant 1&nbsp;\u00e0 2 minutes, jusqu\u2019\u00e0 ce que les nems soient dor\u00e9s.
